Dumpling Recipe
The dumplings
Ingredients list:
- 500g of Pork Mince
- 1/2 tsp Salt
- 1/2 tsp White pepper
- 2 cm Ginger (diced)
- 1 cup of Chinese Chives (diced)
- 1/5th or 1/6th of half of chinese Cabbage (diced)
- 2.5 tbsp Light Soy Sauce
- 3 tbsp Shaoxing Wine (optional)
- 1.5 tbsp of Sesame Oil
- Dumpling wrappers. I use (Double Merinos Gow Gee)
Method:
- Put pork mince in a bowl with the Salt, Pepper, Ginger, Chives, Cabbage, Soy, Shaoxing, Sesame Oil.
Tip: As I haven't quite worked out the exact weight of cabbage to use, add the cabbage in portions while mixing to find a nice balance of it among the meat.
- Mix well
- Get a spoon and spoon out some mince and start packing your wrappers. But with enough room so you can fold the wrapper in half without much trouble
- Dip your finger in some corn starch-y water and trace a semi-circle along the edge of the pastry
- Fold it and seal the edges shut
- You can curl the sides however you like. I personally make two curls on each side. Some people curl from one side to the other. Video to come.
- (optional) I like to wrap a dumpling then cook it to test if further additions are required (eg. More soy, more pepper etc). Cooking in boiled water, steam pot will take around 5 to 8 minutes (raw). Frozen takes around 14+ mins.
The soup (optional)
Dumplings, Soup and Noodles are best cooked separate to each other. I find this just makes it easier to better manage the flavours and helps with time-keeping.
Ingredients List:
- 2 cups of chicken stock and 2 cups of water (1:1 ratio, but you can extend the water)
- 1 tsp of Garlic (minced)
- 1 tsp of Ginger (minced)
- 2 tbsp of Light Soy Sauce
- 1/2 to 1 tsp of Rice Wine Vinegar or Apple Cider Vinegar
- 1 tsp of Sesame Oil
- 1 tbsp of Vegetable Oil
- 1 tsp Salt
- 1 tsp of White Pepper
- 1 to 2 Bunches of Bok Choy
- 1 to 2 Bunches of Chinese Broccoli
Method:
- In a pot on medium to high heat saute garlic and ginger with vegetable oil. 3 to 4 minutes.
- Pour in the liquids, Salt and Pepper. If using Rice Wine Vinegar, you may add 1 tsp of sugar to round out it's sharp flavour.
- Once the dumplings are near or ready add the Bok Choy and Chinese Broccoli into the soup and let it cook for 2 minutes or until tender or your liking
The Noodles
Noodles are totally optional, but it makes it feel like a complete meal. I usually will cook the noodles separate to the soup because of the starch that comes off them. I've read this will only happen in larger portions and with thicker noodle types. Yet to make this risk for science. You can use any kind of noodle for this. Here's a list of ones I like to use:
- Glass Noodles
- Rice Vermicelli, Rice Stick Noodles or any Rice Noodle
- Udon Noodles
I personally prefer Rice Noodles because I enjoy their plain flavour with the soup.
